Q. Why is it a little higher for decaffeinated?
A. Decaffeination is a special process regular coffee beans have to go through to take out the caffeine. That's why there is a little bit of a higher price.
The traditional
method of decaffeinating coffee is the indirect water method. Unroasted coffee beans heat in a steaming
water process which raises the moisture level and allows the caffeine to be
extracted with a synthetic version of ethyl acetate. This chemical binds to the caffeine and is
filtered out. A federal lab has verified
that the trace amount of chemical left on the bean is completely removed during
brewing. The resulting flavor is great,
with a pleasant aroma.
Q. What is Arabica Coffee?
A. Arabica coffees are of such high
quality they require careful hand picking every day during the season. Only the
red cherries are picked each time. Robusta coffees are grown on the flatter land
in rows and are machine picked, stripping the trees of every bean – green, ripe
red, overripe, rotten, etc. One bad bean used in a pot of coffee will affect the
taste of the whole pot.
